Description
Improve baking results and achieve the perfectly charred crust even faster.
This special arch narrows the oven opening such that the high temperature in the chamber remains extremely stable while significantly increasing the air temperature inside. For high-hydration doughs, This creates the ideal conditions for high-hydration doughs to achieve a strong rise and the typical Neapolitan-style, beautifully charred crust in just 45 to 60 seconds. As well as optimising heat distribution, this accessory shortens heat-up time and noticeably improves fuel efficiency. Made from durable 304 stainless steel, the arch can be used with all tray sizes and is compatible exclusively with the second-generation XL oven model.
